NUTRITION CHALLENGE

The start date for the challenge has changed. It will start on Monday, January 4 and run until Sunday, February 14th. Just in time to look even better for your loved one on Valentine's Day. And maybe even kick his/her ass if they don't compliment you.

The workouts will be held Monday January 4, 2010. If you are unable to make it on Monday, arrangements can be made for Tuesday.

Feel free to post questions, concerns, suggestions, helpful tips, recipes, etc in the comments section.

looking forward to the challenge - between Yule / Christmas I've consumed more treats then I care to admit! Giving up caffeine will kick my butt - hope I can maintain my *sunny disposition* as the caffeine fades from memory. :)

Steel-Cut Oatmeal - Crock Pot Method
4 servings

You will need an oven proof bowl that holds four cups of water and will fit inside your crockpot with the crock pot lid on.

Ingredients
one cup steel-cut oats
4 cups hot water for bowl
water for crockpot

Directions
Measure out one cup of oats. Pour that into the inner bowl. Add the four cups of hot water. Stir. Add a dash of salt, if you like (it’s not at all necessary).

Fill the crock with water to a little more than halfway. Set the inner bowl in the crock and see how high the water rises with the displacement. Add water in the crock if necessary–I usually try to match it so that the water reaches about the same height on the outside of the oats bowl as the cooking water inside. Place the lid on your crockpot.

Set on low. Go to bed. In morn you'll have ready to eat oatmeal
